I'm a novice beekeeper (1st Yr). Last year I potted over 30Kg of honey in new plastic pots and stored them in the cellar. A few weeks ago I noticed that it was changing from a golden syrup to milky state. Any suggestions? Have I done something wrong or has the temperature had something to do with it?

Hi Nick
Honey will tend to solidify over time, but if you want to return it to "runny hunny" try standing it on a cool corner of the Aga for a few hours or something of a similar temperature.

Dont forget that heat destroys the vitamins in honey, so if anyone is buying 'shop' honey check to see if it is heat extracted as many of the shop ones are. Often the darker honey has been subjected to heat.
